Chunky Tomatillo Salsa

There is nothing better, healthier and easier than fresh salsa.   While I have made many salsas over the years, I have never tried making one with tomatillos.  Erin was a little skeptical when I picked out the recipe and even more so when I started to chop up the ingredients.  But luckily for us (and our friends) it turned out to be very good and refreshing on a hot day.  

img_3198Also, one of the great things about salsa is that there are so many options and combinations that once you make a couple recipes, it is really easy to play with ingredients and come up with your own favorites.  For us, the only “must have” ingredient is cilantro.  We are huge fans and there is a good chance that if something has cilantro in it, then we’ll love it.

img_3212Chunky Tomatillo Salsa
Makes about 4 cups
Adapted from


1 lb tomatillos, husked, rinsed, cut into 1/4-inch pieced
1/2 red bell pepper, chopped
1/4 cup chopped red onion
1/3 cup chopped fresh cilantro
2 plum tomatoes, seeded, chopped
2 tablespoons minced, seeded jalapeño chilies
2 tablespoons fresh lime juice
2 teaspoons sugar
2 garlic cloves, minced


Mix all of the ingredients in a bowl and serve.  We like it best with tortilla chips.
