Chocolate, Brie and Basil Panini – yes, really

So this recipe sounds a bit out of the ordinary.  If you love chocolate and cheese though, you are bound to love this!

Basil, Brie and Chocolate Panini

The sweetness of the chocolate and basil paired with the tangy flavor of the brie and sourdough made this recipe an instant favorite.  Nicole could eat this any day of the week.  Not too surprisingly, Erin found the pressed sandwich a bit strange…

Basil, Brie and Chocolate

Chocolate, Brie and Basil Panini

Yields 6 Servings 


12 slices sourdough bread

1/3 cup extra-virgin olive oil

12 ounces Brie cheese, thinly sliced

1 (12-ounce) bag semisweet chocolate chips (we prefer Ghiradelli)

1/3 cup thinly sliced fresh basil leaves

Preheat the panini press.

Brush sides of the bread with olive oil.  Place in the press, close, and grill the bread slices until they begin to turn golden, 1 to 2 minutes.  Remove from the panini press and place 2 slices of cheese on one slice of bread, top with 1/3 cup of chocolate chips and sprinkle with basil.  Top with another slice of bread.  Continue with the remaining sandwiches.  Return the sandwiches to the panini press until the chocolate begins to melt, about another 2 minutes.

Cut the sandwiches into triangles and serve.
